Weekend Baking - Pumpkin Cookies

Pumpkin time means yummy pumpkin cookies! A dear American friend of mine shared this recipe with me 4 years ago, during our first Autumn here in Denmark. I didn't know what to do with the pumpkin we bought, and so we made these cookies. They are very yummy (and, I tell myself they are healthy too, with pumpkin and oatmeal in them! Never mind about the chocolate!). If you're looking for something to bake this weekend, here is our favourite Autumn recipe.

Pumpkin Cookies
4 cups of flour
2 cups of oatmeal
2 tsp baking soda
1 tsp cinnamon
1 tsp salt
1 1/2 cups butter
1 cup white sugar
2 cups brown sugar
1 egg
1 tsp vanilla
2 cups (16 oz) pumpkin (we use fresh...you can't buy canned pumpkin here!)
1 cup chocolate chips

Preheat the oven to 180* (350*). Mix the dry ingredients together. Cream the butter and sugars. Stir in egg and vanilla. Alternate additions of pumpkin and dry ingredients into butter mixture. Stir in the chocolate chips. Drop spoonsize blobs onto a cookie sheet. Bake for 12 minutes until golden brown.

After they are cool, make your favourite vanilla frosting to spread on the top. (I won't share mine, as I just googled a recipe and had to add unknown quantities of butter and icing sugar to get it right).
